Preparation steps
1.
Cook potatoes and let cool. Cut potatoes crosswise to create a lid and scrape out most of contents from skins. Place potato contents in a bowl and season with salt and pepper to taste, plus 3 tablespoons of olive oil and the lemon juice. Cut foie gras into cubes and mix gently with spiced potatoes.
2.
Fill hollowed potato skins with potato and foie gras mixture and top with potato lid. Garnish with chives and sea salt and serve an appetizer.
