400 grams width Tagliatelle
salt
1 onion
2 Tbsps olive oil
2 sprigs flat-leaf parsley
5 Leeks
4 Anchovy
2 Zucchini
1 tsp lemon zest (organic)
freshly ground peppers
50 grams shaved Parmesan
1 tsp pink peppercorns
chive flower (for garnishing)

Preparation steps

Cook pasta in boiling salted water until al dente.

Peel and halve onion, cut into strips. Heat oil in a pan and saute onion, stirring, for a few minutes. Rinse parsley, shake dry and cut leaves into thin strips. Rinse chives, shake dry and cut into small rings. Pat dry anchovies, chop coarsely and add to onion, mash slightly.  Rinse and trim zucchini, cut into long strips with a vegetable peeler. Add to the pan and mix well, saute for 1-2 minutes. Add lemon zest with herbs and drained pasta, toss well and season with salt and pepper.

Place pasta into deep bowls and serve sprinkled with Parmesan and pink peppercorns. If desired, garnish with chive flowers.
