130 grams butter
130 grams Pastry flour
1 Vanilla bean
250 grams Quark (well squeezed and drained)
2 egg yolks
2 egg whites
100 grams Fruit (candied such as pineapple, mango, papaya, sea buckthorn)
Fruit (candied, for garnishing)
1 Dish cloth
1 Pudding mold

Preparation steps

Line high pudding form with a damp cotton cloth. In a small pan, melt butter, add flour and cook until lightly brown. Slit vanilla pod lengthwise and add seeds to roux. Cool slightly, add quark and egg yolks, whisk well.

Chop candied fruit finely and mix with the batter. Beat egg whites until stiff and fold into batter. Pour batter into the form and place into a roasting pan filled with hot water. Bake in preheated oven at 180°C (approximately 350°F) for about 30-45 minutes. Cool slightly and pull out of mold, using a cloth. Place on a plate and dust with powdered sugar. Serve.
