1 chicken (about 1.2 kg)

2 lemons
1 shallot
1 garlic clove
20 grams ginger
1 sm can Saffron (0.1 gram)
300 milliliters Chicken broth
2 Tbsps olive oil
4 small Pear
2 dried Apricot
2 Tbsps raisins
2 Tbsps golden raisin
2 Tbsps Cashews
1 Tbsp butter
1 Tbsp liquid honey
1 tsp chopped parsley

Preparation steps

Rinse chicken, pat dry and cut into 8 pieces. Rub with salt and pepper. Rinse lemons in hot water, pat dry and zest a lemon. Cut both lemons into slices. Peel shallot, garlic and ginger and chop finely. Stir 3-4 tablespoons broth with saffron and let rest.

Heat oil and sauté shallot, garlic and ginger. Add chicken pieces to and lemon slices and pour saffron broth overtop. Bring to boil, reduce heat, cover, and simmer gently for 35-40 minutes.

Peel and quarter pears. Chop apricots into small pieces and mix with raisins, golden raisins, cashews and lemon zest. Lightly sauté pears in butter until light brown, adding dried fruit mixture in last 5-10 minutes of cooking.

Season to taste with honey, salt and pepper and serve sprinkled with parsley.
