8 cups Orecchiette pasta
3 cups Broccoli (washed)
¼ cup olive oil
2 cloves garlic cloves (minced)
parsley minced (small bunch)
½ cup romano cheese (grated)
1 cup grated Parmesan (divided)
1 tsp crushed Red pepper flakes
freshly ground Black pepper (to taste)

Preparation steps

1.
Bring a pot of salted water to a boil.

Cut broccoli florets into small bite-size pieces, including some of the leafy stalk. Once the pot of water has reached the boiling point add the pasta and stir briefly. About 3-4 minutes before pasta reaches the al dente stage, add the broccoli.

Meanwhile, heat the olive oil in a large skillet over medium heat, add the garlic and parsley and saute gently. Do not let the garlic brown.

Once the pasta is ready, drain and transfer the pasta and broccoli to the skillet. Stir in the Romano cheese, 1/2 cup Parmesan cheese, red pepper flakes, and season with pepper, to taste. Cook until warmed through, 1 to 2 minutes.
5.
Transfer to a serving dish and sprinkle with the remaining Parmesan cheese. Serve.
