1 cup warm milk
¾ oz Yeast
2 eggs
3 ½ cups all-purpose flour
cup fine Durum wheat semolina
1 tsp salt
4 Tbsps butter
runny honey

Preparation steps

1.
Mix together the milk and the yeast. Cover and leave to rest for around 15 minutes.
2.
Beat in the eggs one at a time and gradually stir in the flour, semolina and the salt. The batter should have a liquid consistency. If necessary, add more milk. Cover and leave for around 90 minutes in a warm, draught-free place.
3.
Place some butter in a hot pan and add some batter. Spread thinly and fry on a low heat until the bottom is light brown and small holes appear in the top. Do not flip. Remove from the pan and continue until the batter has been used up.
4.
Serve the pancakes drizzled with honey.
