- 1 pkg Bocconcini (150g)
- 3 small Zucchini
- 4 scallions
- 1 handful mint
- 2 garlic cloves
- ½ tsp pink peppers
- 400 milliliters olive oil
Preparation steps

Drain the mozzarella balls in a colander. Rinse the zucchini, trim and thinly slice lengthwise and halve crosswise. Rinse and trim the scallions and halve crosswise. Rinse the mint leaves and shake dry. Halve the garlic lengthwise.

Wrap each mozzarella ball with a slice of zucchini and secure with toothpicks. Place the rolls in glasses along with the scallions, garlic, pink pepper and mint pour the olive oil over to cover. Refrigerate 24 hours for the flavors to infuse.
