½ cup butter
¾ cup sugar
1 egg (beaten)
2 ¼ cups all-purpose flour
2 ½ tsps Baking powder
½ tsp baking soda
1 pinch salt
1.333 cups plain Yogurt
1 large pomegranate (seeds only)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 12 hole muffin tin.

Beat the butter and sugar together in a mixing bowl until light and fluffy. Beat in the egg.
3.
Sift in the flour, baking powder, bicarbonate of soda and salt and stir until just combined.
4.
Gently stir in the yoghurt and pomegranate seeds.
5.
Spoon into the tins and bake for 20 minutes until the muffins are golden and springy to the touch. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
