Ingredients

For the cake
¾ cup butter
¾ cup caster sugar
3 eggs
1 ¼ cups self-rising flour
½ cup Almond flour
½ tsp Baking powder
cup milk
4 Tbsps cocoa powder
8 ozs canned, crushed Pineapple
For the icing
1 cup powdered sugar
water
To decorate
chopped candied pineapple

Preparation steps

1.
For the cake: heat the oven to 170°C (150° fan) 325°F gas 3. Grease a 900g|2lb loaf tin and line the base with non-stick baking paper.

Beat together the butter and sugar in a mixing bowl until light and fluffy.

Beat in the eggs, flour, almonds, baking powder, milk and cocoa until smooth. Stir in the pineapple.
4.
Put into the tin and bake for 45-50 minutes until risen and a skewer inserted into the centre comes out clean. Cool in the tin for 15 minutes, then place on a wire rack to cool completely.
5.
For the icing: sift the icing sugar into a bowl and beat in enough water to make a smooth thick icing.
6.
Drizzle over the cake, as in the photo and decorate with chopped glace pineapple. Leave to set.
