1 ½ cups roast Hazelnuts
cup sugar
½ cup Milk chocolate (40% cocoa solids; chopped)
2 Tbsps unsalted butter
1 ⅔ cups plain Dark chocolate (70% cocoa solids)

Preparation steps

1.
Grind the hazelnuts and sugar in a food processor to a paste.
2.
Melt the milk chocolate and butter in a heatproof bowl over a pan of simmering (not boiling) water. Stir in the hazelnut paste.
3.
Polish the insides of 30-40 small chocolate moulds with cotton wool.
4.
Melt the plain chocolate as before.
5.
Brush a thin layer of plain chocolate in the moulds and chill for 5 minutes until set. Repeat once more.
6.
Fill the chocolate hollows with the hazelnut mixture and freeze for 3-5 minutes until set.
7.
Cover with the remaining plain chocolate and leave to set at room temperature. Carefully press out the chocolates onto a cool surface.
