1 ¾ cups xylitol icing sugar
2 tsps grated lemon zest
2 tsps ground Anise seed
1 ½ cups all-purpose flour (plus extra for dusting)
½ tsp Baking powder

Preparation steps

1.
Whisk the eggs and xylitol icing sugar until thick and light. Stir in the lemon zest and ground aniseed.
2.
Sift in the flour and baking powder and mix well to form a dough. Wrap in cling film and chill for 1 hour.
3.
Line 2 baking trays with non-stick baking paper.
4.
Roll out the dough on a lightly floured surface, to 1 cm| 1/2" thickness. Cut into small rounds and place on the baking trays. Leave to stand uncovered, overnight.
5.
Preheat the oven to 180°C (160° fan) 350°F gas 4.
6.
Bake for 20-30 minutes, until cooked and firm, but still pale. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
