Heat the oil in a large frying pan, add the onion and peppers and cook stirring occasionally until soft. Stir in the ham and parsley.

Beat the eggs and season well with salt and pepper.
3.
Heat the butter in a large frying pan and pour in 1/4 of the beaten eggs, tilting the pan to spread it evenly. Cook until the omelette is just set underneath but slightly runny on top. Repeat with the remaining mixture.
4.
Place the omelettes on serving plates and spread with the ham mixture. Serve immediately with toast.
