2 cups white chocolate (grated)

Preparation steps

1.
Melt the grated chocolate in a bain-marie, removing it from the heat before it melts completely. Stir and smooth the chocolate with the spatula as it continues to melt (be sure not to stir vigorously to avoid introducing air bubbles to the chocolate).

Pour the chocolate into the star moulds, taping each one to release any air bubbles. Level off with the spatula and catch any drips. Leave about 2 tablespoons of melted chocolate behind in the bowl and keep at room temperature.

Leave the moulded chocolate to cool at room temperature for a few minutes before transferring the sheet to the fridge for 30 minutes.

After this time, melt the remaining chocolate in the bain-marie again. Remove the sheet from the fridge; dip each raisin in the melted chocolate and place carefully on top of each star. Leave to set and chill for another 30 minutes.
5.
The stars are ready to be turned out once the chocolate shrinks a little from the sides: twist each mould gently to release them and present the stars in a pretty bowl.
