Preparation steps

Rinse the zucchini, halve lengthwise, and julienne. Heat 2 tablespoons of olive oil in a pan and gently sauté the zucchini with the sage for 2-3 minutes. Season to taste with salt and pepper.

Cook the farfalle in boiling salted water until al dente, then remove. Mix the pasta with 2 tablespoons of butter and 2-3 tablespoons pasta cooking water. Toss to combine, then add the zucchini (minus the sage leaves). Mix thoroughly and season to taste with salt and pepper. Divide into plates and garnish with plenty of grated parmesan cheese.
