1 Tbsp sesame oil
1 Tbsp dark soy sauce
2 tsps sugar
2 Tbsps Rice wine vinegar
2 Tbsps pickled ginger

Preparation steps

1.

Rinse cucumber and cut into very thin slices, sprinkle the cucumber slices with salt and allow to drain for 45 min. in a colander. Then rinse under running water and pat dry.

Drain ginger and cut into thin strips. Combine ginger with the remaining ingredients and then combine with the cucumber, Let infuse about 15 min. before serving. Then arrange on plates.
