¼ cup dairy-free margarine
¾ cup xylitol
1 cup Mango puree
1 large egg (lightly beaten)
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 ½ tsps Baking powder
½ tsp baking soda
1 cup chopped almonds
1 ripe Mango (peeled and diced)
To decorate
powdered xylitol

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm x 13cm|9" x 5" loaf tin and line the base with non-stick baking paper.

Beat together the margarine and xylitol until blended.
3.
Add the mango puree, egg and vanilla, and beat until combined.
4.
Sift in the the flour, baking powder and bicarbonate of soda, stirring until just combined. Stir in the amonds and diced mango.
5.
Pour into the tin and bake for about 40 minutes - a skewer inserted into the centre should come out clean. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
6.
Sprinkle the top with a little powdered xylitol.
