2 cups Hokkaido pumpkin (chopped)
3 cups vegetable stock
2.333 cups dried, soft Apple ring
2 Tbsps double cream
2 thyme
1 tsp fresh ginger (grated)
2 tsps Curry powder
1 small organic Apple (sliced or grated)
cup cream (whipped)

Preparation steps

1.
Cook the pumpkin in the vegetable stock. After around 10 min add the apple rings and cook until they are soft then puree with a hand mixer.
2.
Stir in the double cream, thyme leaves, ginger and the curry powder and season with salt. Simmer for 10 min and then pour into soup bowls. Garnish with the apple and serve with a dollop of cream on top.
