- ¼ cup sunflower oil
- 1 onion (finely sliced)
- 2 cloves garlic cloves (chopped)
- 2 inches fresh ginger (peeled and minced)
- 1 red chili pepper (seeded and finely chopped)
- 2 tsps Curry powder
- 1 tsp Turmeric
- 1 ½ cups Red lentils
- 1 cup canned Tomatoes (chopped)
- 4 cups vegetable stock
- 2 scallions (sliced)
- cilantro (chopped)
- salt
- freshly ground Black pepper

1.
Heat the oil in a saucepan and fry the onions until softened.

Add the garlic, ginger, chilli pepper, curry powder and turmeric and cook for 2 minutes then add the lentils and stir well.
3.
Add the tomatoes and stock, season with salt and pepper and pour into a slow cooker.
4.
Cover the cooker with a lid and cook on high for 4 hours until the lentils are soft. Adjust the seasoning to taste.
5.
Serve garnished with the spring onions and coriander.
