- 2 Chicken breasts
- 1 chili pepper
- 1 garlic clove
- 1 yellow paprika
- 1 green paprika
- 1 Red onion
- 2 Tbsps vegetable oil
- 100 milliliters Chicken broth
- 100 grams Corn kernel
- salt
- cayenne pepper
- 2 Tbsps chopped parsley
- 4 Tortillas
Preparation

Rinse chicken breasts, cut into small cubes. Rinse chile peppers and chop finely. Peel and press garlic. Rinse chile peppers, trim, remove seeds and cut into thin strips. Peel, halve and dice onion into strips.

Sauté diced chicken in hot oil, add peppers and onion and deglaze with broth. Add corn kernels, chile peppers and garlic and let simmer for 5-7 minutes at low temperature. Sprinkle salt, cayenne pepper, and 1 tablespoon parsley over tortillas. Serve sprinkled with remaining parsley.
