1 chicken (approximately 1.4 kg)
1 onion (finely chopped)
2 garlic cloves (finely chopped)
1 carrot
1 stalk Celery
1 bunch parsley (chopped)
4 Sage (chopped)
350 milliliters white wine
2 Tbsps White vinegar
50 grams Pancetta (diced)
150 grams button Mushroom
4 Tbsps olive oil
400 grams diced Tomatoes (canned)
salt

Preparation steps

1.

Rinse the chicken well and pat dry. Divide into 8 pieces.

Rinse the carrot and celery, peel and finely dice. Mix with the onion, garlic, carrot, celery, parsley, sage, vinegar and wine in a bowl and let the chicken pieces marinate overnight.

Rinse the mushrooms and cut into quarters.

Drain the chicken and saute in hot oil on all sides in a Dutch oven until golden brown. Remove, add the mushrooms and the vegetables from the marinade and sauté. Deglaze with 100 ml (approximately 1/2 cup) of marinade and add the tomatoes. Insert the chicken pieces and simmer covered over low heat for about 40 minutes. Season with salt and pepper. Serve sprinkled with basil on warmed plates.
