2 large eggs
1 ¼ cups powdered sugar (plus extra for dusting)
¼ cup Tapioca flour
½ cup Rice flour
½ tsp gluten-free Baking powder
½ tsp xanthan gum
½ cup butter (melted)
1 tsp honey
1 Apple (peeled and grated)

Preparation steps

1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Butter 24 madeleine tins.
2.
Whisk the eggs and icing sugar in a mixing bowl with an electric whisk until thick and creamy.
3.
Sift in the flours and xanthan gum and fold into the mixture alternately with the melted butter.
4.
Whisk in the honey, then stir in the apple.
5.
Spoon into the tins and bake for 8-10 minutes until golden brown. Place on a wire rack to cool completely.
6.
Sift icing sugar over the cakes.
