1 cup cooked, baby new Potato (thickly sliced)
2 Tbsps olive oil
1 onion (finely chopped)
4 large eggs
1 Tbsp chopped thyme
cup cherry Tomatoes (halved)
0.333 cup soft Goat cheese (crumbled)
4 slices cooked ham (chopped)

Preparation steps

1.
Heat half the oil in a frying pan. Add the onion and gently cook for 3-4 minutes, until soft.
2.
Lightly beat the eggs, then stir in the thyme, cooked onion, potato slices, tomatoes, cheese and ham.
3.
Heat the grill.
4.
Add the remaining oil to the pan and pour in the egg mixture. Cook over a low heat for 8 minutes until the base begins to set.
5.
Put the pan under the grill and cook for 5-8 minutes until the centre is cooked through and firm.
6.
Serve warm or cold, cut into wedges with cherry tomatoes.
