3 Tbsps soft brown sugar
6 canned Pineapple (rings)
½ cup butter
½ cup caster sugar
2 eggs (beaten)
1 cup all-purpose flour
1 tsp Baking powder
¼ tsp baking soda
3 Tbsps Pineapple juice (from the can)

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Butter a 23cm|9" cake tin.
2.
Sprinkle the brown sugar on the base of the tin and arrange the pineapple slices in a circular pattern.
3.
Beat the butter and sugar in a mixing bowl until light and fluffy. Beat in the eggs until blended.
4.
Sift in the dry ingredients and stir until blended. Stir in the pineapple juice.
5.
Spoon the mixture carefully over the pineapple rings, spreading it out gently.
6.
Bake for about 30 minutes until the cake is cooked through. Cool in the tin for a few minutes, then invert onto a plate.
