Curried Chicken and Asparagus

- 1 lb Asparagus
- 9 ozs Chicken breasts
- 1 Tbsp sunflower oil
- 2 Tbsps Curry powder
- 1 pkg ready-to-mix Hollandaise sauce (with herbs)
- 1 Mango
- ½ cup Heavy cream
Rinse asparagus, cut off ends and peel the lower third. Cut diagonally into pieces 3 cm (approximately 1 inch) long.
Rinse chicken breasts, pat dry and cut into medium-sized cubes.
Heat sunflower oil in a skillet and fry chicken cubes until browned. Add asparagus pieces and fry briefly.
Add curry powder and stir in 300 ml (approximately 1 1/4 cups) water.
Stir in the package of MAGGI Fix & Fresh "Housewife Style" hollandaise sauce and prepare according to package instructions. Bring mixture to a boil and cook over medium heat for 10 minutes, stirring occasionally.
Meanwhile peel mango, cut flesh from pit and dice finely.
Stir mango cubes into the skillet, simmer briefly over low heat and serve.

The mango is a real highlight not only visually and culinary: the exotic fruit also brings so much vitamin C into play that the daily requirement is covered by about 70 percent. In the case of vitamin A, which is good for the eyes and skin, it is even 100 percent.
Even smarter
The pan is ideal as a "playground" for those who like to experiment: white asparagus, cauliflower or broccoli also taste good in this dish. You can also swap the chicken filet for turkey. Either way, the best side dish is always grainy brown rice.
