- 300 grams Le Puy lentils
- 600 milliliters Vegetable broth
- 2 Tbsps apple cider vinegar
- 2 Tbsps lemon juice
- 4 Tbsps sunflower oil
- 1 pinch sugar
- salt
- peppers
- 300 grams Smoked salmon
- lamb's lettuce (for garnish)
Preparation

Rinse lentils and drain. Boil broth, add lentils and simmer for approximately 20 minutes.

For the dressing, mix vinegar with lemon juice, oil and sugar. Season with salt and pepper. Drain lentils and cool until lukewarm. Mix with dressing.
3.
Cut salmon into cubes, arrange on top of lentil salad and serve garnished with lettuce.
