Hearty Smoked Salmon Sandwiches

- ½ lemon
- 3 ozs Cream cheese (13% fat)
- salt
- peppers
- 5 sprigs Chervil
- 4 slices Whole Grain Rye Rolls
- 1 small Red onion
- 4 ozs Smoked salmon
Cut the lemon in half and squeeze out the juice. Whisk cream cheese in a small bowl until creamy. Add lemon juice and season with salt and pepper.
Rinse chervil, shake dry, pluck leaves and chop coarsly. Add the chopped chervil to the cream cheese.
Toast the whole-grain rye bread slices lightly in a toaster or in a preheated broiler.
Peel onion and cut into thin slices.
Spread the cream cheese mixture on toasts, top with smoked salmon and onion slices and serve.

Even smarter
At least as tasty as butter, but much less fat is the cream cheese as a spread. If you like it spicy, you can season it with a little grated horseradish or wasabi paste (glass or tube).
