300 grams Cod
300 grams shrimp (ready to cook and peeled)
1 chili pepper (green)
1 sprig Thai basil
50 grams Coconut flakes
1 tsp Shrimp paste
salt

2 tsps sugar (brown)
Also:
12 Sugarcane sticks
vegetable oil (for frying)
1 bottle Sweet chili sauce (Asian)

Preparation
1.

1. Mince the cod fillet and puree with the shrimp in a food processor.

2. Rinse the basil, pluck the leaves from the stalk and chop coarsely. Rinse the chile, cut lengthwise, remove the seeds and ribs and finely dice. Knead together with the remaining ingredients.

3. Separate the dough into 12 portions and shape each portion into oval patties. Put the sugarcane stick in the middle of the patties and fold around the stick. Press and dampen seam if needed to make sure it is secure.

4. Fry the fish sticks in plenty of hot oil in a pot or in the fryer for 3-5 minutes. Dry on absorbent paper and serve hot with sweet chile sauce.
