Citrus Salad

- 1 Orange (or blood orange)
- 1 small Grapefruit
- 1 large Mandarin orange
- 4 Kumquat
- 2 Tbsps Orange liqueur (or orange syrup)
- 1 small Star fruit
- 5 ozs Greek Yogurt (0.1% fat)
- 9 ozs Yogurt (3.5% fat)
- ½ Vanilla bean
- 1 Tbsp liquid honey
- 1 heaping Tbsp Shelled pistachio (about 20 grams)
- 8 wafer-thin Chocolate (bittersweet)
Peel the thick rind off the orange and grapefruit so all the white is removed. Working over a bowl to collect the juice, cut out fruit fillets between the separating skins.
Peel Mandarin orange, remove all the white skin and cut the fruit crosswise into slices. Rinse kumquats, pat dry and cut into slices.
Put orange and grapefruit segments in the bowl with the collected juice and add Mandarin oranges and kumquats. Mix in orange liqueur or syrup. Rinse star fruit thoroughly and cut into slices.
Add both yogurts to another bowl and stir until creamy. Cut the half vanilla bean lengthwise, scrape out the seeds and mix with honey into the yogurt.
Chop pistachios with a large knife. Layer citrus salad, yogurt and chocolate wafers into 4 glasses. Top with star fruit slices and pistachio garnish and serve.
