Buckwheat Galettes with Goat Cheese and Radish

- 3 ½ ozs Buckwheat flour
- 1 ¾ ozs Spelt flour (Type 630)
- 2 eggs
- 5 ozs milk (whole)
- 1 ½ ozs butter (9 tsp; of which 5 tsp liquid)
- ½ tsp salt
- 10 ozs Goat cheese
- 1 oz Chives (1 bunch)
- 1 Cucumber
- 2 bunches Radish
- 1 bunch scallions
- 3 Tbsps soy sauce
- 2 Tbsps lemon juice
- 2 Tbsps sesame oil

Mix both flours with eggs, milk, 5 ounces cold water, melted butter, and salt until smooth and let rest covered for about 30 minutes.
In the meantime, cut cheese into slices. Wash the chives, shake dry and cut into fine rolls.
For the salad, clean and wash the cucumber, cut in half lengthwise and scrape out the seeds with a spoon; cut the halves into slices. Clean radishes, wash and cut into narrow wedges. Clean and wash spring onions and cut into small rolls. Mix all salad ingredients with the soy sauce, lemon juice and sesame oil and season with salt and pepper.
For the galettes, heat 1 tsp of butter in a frying pan. Using a ladle, pour in 1⁄4 of the batter at a time and bake in succession over medium heat, 2-3 minutes per side, for a total of 4 galettes. Top each galette with cheese, fold edges over and sprinkle each with 1 tsp sesame seeds.
Bake on a baking sheet in the preheated oven with the grill function for 3-5 minutes until the cheese begins to melt. Arrange galettes with salad and sprinkle with chives.

Even smarter
Galettes are classically prepared with buckwheat flour. However, if you wish, you can also use other types of flour for the Breton pancakes, for example wheat, spelt or emmer wholemeal flour.
