Asian Vegetable Soup with Glass Noodles

- 40 grams Glass noodles
- 40 grams Snow peas
- 250 grams green Asparagus
- 1 Tbsp vegetable oil
- 1 generous pinch red Curry paste
- 600 milliliters Vegetable broth
- 1 pinch sugar
- lemon juice
- soy sauce
- 1 Tbsp scallions
Place glass noodles and snow peas in a large pot of boiling water, leave to soak for about 2 minutes, drain in a colander, rinse with cold water and drain again. Rinse asparagus, trim and cut diagonally into pieces. Heat oil in a saucepan and saute curry paste.
Add vegetable stock and sugar, boil and use stock to cook asparagus for 5-8 minutes. Shortly before end of cooking, add glass noodles and snow peas and continue cooking. Season to taste with lemon juice and a little soy sauce. Serve immediately garnished with chives.

Sugar snap peas are easily digestible, unlike most other pulses they do not have a bloating effect and can even be eaten raw. However, if you suffer from a histamine intolerance, you should treat the green sugar snap peas with caution - they can cause complaints due to their relatively high histamine content. As an alternative to sugar snap peas, broccoli or zucchini, for example, can be used for a low-histamine variant.
