- 400 grams Chicken breasts
- 150 grams Cherry tomatoes
- 125 grams Arugula
- 80 grams Parmesan (sliced)
- 1 Tbsp peppercorns (green)
- 2 garlic cloves
- 2 Tbsps olive oil
- 1 Tbsp clarified butter
- salt

- 2 Tbsps balsamic vinegar (White)
Preparation

Cut chicken breasts into strips, season with salt and pepper. Heat clarified butter in a pan and saute chicken for a few minutes and set aside, cool. Rinse and halve tomatoes. Rinse and spin dry arugula, cut out hard stalks and arrange on plates.

Peel garlic and chop finely. Heat oil in a pan and saute garlic for a few seconds. Add peppercorns, chicken and tomatoes and saute briefly. Top arugula with the mixture and sprinkle with Parmesan. Serve.
