White Cabbage Cilantro Salad with Almonds

- 42 ¾ ozs Green cabbage (1 white cabbage)
- salt
- ½ red chili pepper
- 3 ½ ozs Coconut water
- 4 Tbsps Lime juice
- 2 Tbsps sesame oil
- 2 Tbsps olive oil
- 1 tsp soy sauce
- peppers
- 1 tsp honey
- 4 ½ ozs almonds
- 5 ozs cilantro (0.5 Bund)
Clean cabbage, wash, shake dry, cut out the stalk and cut cabbage into fine strips or cubes. Sprinkle with salt, knead vigorously for 5 minutes and let stand for 1 hour.
Meanwhile, halve chili pepper lengthwise, remove seeds, wash and chop. Mix coconut water with lime juice, oils and soy sauce and season with pepper and honey.
Squeeze cabbage and mix with almonds and coconut marinade.
Before serving, wash cilantro, shake dry, pluck leaves and mix into salad.
