Vegetable Wraps with Plum Dipping Sauce

- 8 Beet Greens
- 7 ozs Broccoli
- salt
- 2 carrots
- 7 ozs Red cabbage
- 1 handful Enoki mushrooms
- ½ handful Cress
- 1 Tbsp Sesame seeds
- 2 Tbsps soy sauce
- 2 Tbsps Chili sauce
- 1 Peach
- 2 Apricot
- 2 Plum
- 1 tsp honey
- 1 tsp lemon juice
- 2 Tbsps sesame oil
- freshly ground peppers
Rinse and dry leaves. Rinse broccoli and blanch for 4-5 minutes in salted water, rinse and drain well. Peel and mince carrots. Rinse and shred cabbage.
Lay leaves on the work surface. Top with prepared vegetables and mushrooms. Sprinkle with cress and sesame. Drizzle with soy sauce and chili sauce. Roll up leaves.
Rinse and pat dry peach, apricots and plums. Remove seeds and dice flesh. Set some peach aside for garnish. Puree remaining fruit, honey, lemon juice and oil. Season with salt and pepper and pour into small bowl.
Serve wraps with sauce and garnish with peaches.
