300 grams turkey breasts (skinned)
2 Pear
1 Tbsp Walnut oil

Preparation
1.

Peel the red onions, halve and cut into half rings. Rinse, trim and slice the Brussels sprouts. Peel the salsify and cut into slices.

Heat ½ tablespoon sunflower oil in a pan and fry the onion and salsify for a few minutes. Add the Brussels sprouts, stir in the caraway, season with salt and pepper. Pour in ½ cup water and simmer covered for 5 minutes.

Cut the turkey breast into strips, and season with salt and pepper. Heat the remaining sunflower oil in another pan and fry the turkey breast strips quickly. Remove the fried the turkey breast strips from the pan and keep warm.

Peel the pears, quarter, remove the seeds and dice. Add the pears into the salsify mixture in the pan.

5.

Stir in the walnut oil and cook for another 3 minutes. Season to taste, and serve the vegetables with fried turkey breast strips.
