- 1 garlic clove
- 600 grams Tomatoes
- 2 Tbsps olive oil
- 800 milliliters Vegetable broth
- 1 pc Parmesan (30 grams)
- salt
- cayenne pepper
Preparation
1.
Peel onions and garlic. Cut onions in half and cut into strips. Finely chop garlic.

Blanch tomatoes in hot water, drain, rinse with cold water, peel, cut into quarters, remove core and cut into cubes.

Heat oil in a pan. Cook onions and garlic in the pan over medium heat until soft. Deglaze the pan with broth, add tomatoes and simmer over low heat for about 20 minutes.

Meanwhile grate Parmesan.

Season to taste with salt and cayenne pepper and arrange in 4 bowls. Sprinkle with Parmesan and serve.
