Stir Fry Chicken

- 2 bunches scallions
- 1 pc fresh ginger
- 2 garlic cloves
- 1 green chili pepper
- 1 Lime
- ½ slightly under ripe Papaya
- 2 stalks Thai basil
- 2 stalks cilantro
- 2 stalks mint
- 9 ozs Chicken breasts (boneless, skinless)
- 2 Tbsps vegetable oil
- salt
- peppers
- 2 Tbsps Thai fish sauce
- 2 Tbsps soy sauce
- 2 Tbsps Vegetable broth
Rinse scallions, pat dry and cut into approximately 3/4-inch lengths.
Peel ginger root and cut into fine strips. Peel garlic and chop finely.
Rinse chile pepper and cut into thin rings. (If you like less heat, remove seeds and ribs.)
Squeeze juice from lime. Peel papaya, halve and scoop out seeds with a spoon. Cut the papaya into thin strips approximately 3/4-inch length. Mix papaya with 2 tablespoons lime juice in a bowl.
Rinse herbs, shake dry and pluck leaves.
Rinse chicken, pat dry and cut into thin strips.
Heat 1 tablespoon oil in a wok over high heat. Season chicken with salt and pepper. Stir-fry chicken until browned, then remove from wok.
Add scallions, ginger, garlic and chile and stir-fry until fragrant, about 1 minute.
Add papaya and stir-fry until softened, about 2 minutes.
Add fish sauce, soy sauce and broth and bring to a boil.
Return chicken to wok and cook, stirring, until heated through, about 1 minute. Stir in herbs and serve immediately.
