Non Dairy Creamy Spinach

- 11 ozs Spinach (frozen)
- 1 onion
- 1 garlic clove
- 1 Tbsp vegetable oil
- salt
- peppers
- 2 Tbsps Chicken broth
- ¾ cup Soy creamer
- Nutmeg
Thaw the spinach. Meanwhile, peel the onion and garlic and finely chop.
Squeeze spinach well to remove excess moisture and coarsely chop.
Heat oil in a pot over medium heat. Sauté onions and garlic, stirring frequently, until softened. Add spinach and sauté 1 minute more. Season with salt and pepper.
Pour chicken stock and soy creamer into the pot and stir to combine.
Bring to a boil and cook until sauce is thickened. Season with salt and pepper. Grate nutmeg over the top and serve.

Spinach contains vitamins C, E, and A, which reliably intercept cell-damaging free radicals. Due to its richness in folic acid and iron, it is particularly good for pregnant and breastfeeding women, and the soy cream provides additional protein.
Even smarter
You can also use fresh leaf spinach for the dish. This is a bit more work, because it has to be washed very thoroughly several times.
