450 grams double grip Pastry flour (such as spaetzle flour or Wiener Grießler)
8 eggs
1 Tbsp vegetable oil

Add the flour to a bowl. Break the eggs into a separate bowl, then incorporate into the flour.

Add the oil and 1 teaspoon salt to the flour mixture.

Whisk the dough with a hand mixer fitted with a dough hook. Beat until it begins to bubble.

Bring a large pot of salted water to a boil. Ladle the dough, in batches, onto a wooden board with a scraper. Scrape the dough into the water. Alternatively you can use a spaetzle planer.

Bring the water back to a boil and cook the spaetzle until they rise to the surface. Let boil for a few minutes, stirring constantly. Remove with a slotted spoon and drain well.

Serve immediately. Mix with a sauce like a basil pesto.
