Smoked Turkey and Pepper Sandwich

- 4 ozs Ricotta cheese
- 1 small yellow Bell pepper
- 1 Pickled cucumber
- 3 ozs Smoked turkey breast (in slices)
- ½ bunch Chives
- 4 sheets Basil
- salt
- peppers
- 2 Whole Grain Rye Rolls
Put the ricotta in a fine sieve set over a bowl and let drain.
Meanwhile, rinse the bell pepper, halve, remove seeds and finely chop. Cut the pickles and turkey breast into small cubes.
Rinse the chives and basil and shake dry. Pluck basil leaves and thinly slice both herbs.
Put the drained ricotta in another bowl. Add the bell pepper, turkey, pickles and herbs and mix well. Season with salt and pepper.
Cut the rolls in half and scoop out some of the interior with your fingers.
Divide the ricotta mixture among the rolls and serve.
