Shrimp Skewers with Mint Sauce

- 1 handful mint
- 2 Tbsps White vinegar
- 100 milliliters sunflower oil
- 1 tsp honey
- Lime juice
- ½ tsp grated Lime zest
- salt
- 500 grams shrimp (deveined, peeled, tail-on)
- 4 Tbsps olive oil
- 2 Tbsps Lime juice
- white peppers
- 1 garlic clove
Preparation

Rinse and dry the mint, then remove the leaves. Puree the mint with the vinegar in a blender, then gradually incorporate the oil. Mix in the honey, lime juice, and lime zest. Season to taste with salt.

Rinse and dry the shrimp, then place on the skewers. Mix together 2 tablespoons of oil, lime juice, the white pepper, and the peeled and crushed garlic to form a marinade. Brush the shrimp with the marinade. Heat some oil in a pan, and sear the shrimp skewers for 2 minutes on each side. Remove from the pan, and serve with the mint sauce.
