Rinse the potatoes. Beat the egg whites and salt. Mix with cold water, as needed. Spread half of the egg whites on a baking tray. Place the potatoes on the baking tray. Sprinkle the potatoes with the rosemary and completely cover with the remaining salt and egg whites. Bake in the oven for 70 minutes.

To serve, break the crust and remove.
