- 2 Zucchini
- 1 onion
- 1 garlic clove
- 120 grams Pastry flour
- 4 eggs
- 1 handful freshly chopped parsley
- 150 grams grated Cheese (such as Cheddar)
- salt
- freshly ground peppers
- vegetable oil (for sautéing)
Preparation

Rinse, trim and grate the zucchini into a bowl. Peel the onion and garlic, chop finely and add to zucchini. Stir in the flour, eggs, parsley and cheese. Season with salt and pepper and mix well.

Heat oil in a large skillet and working in batches, drop the zucchini mixture by tablespoonfuls into the pan and flatten slightly. Saute until golden brown, 3-4 minutes per side. Repeat until all the batter is used. Drain on paper towels and serve.
