- 1 Cucumber
- 4 scallions
- 2 Tomatoes
- 1 untreated Lime
- 4 Tbsps Mayonnaise
- 4 Tbsps Yogurt (0.1% fat)

Preparation
1.
Remove the skin from the sausage, cut into slices and then into strips. Rinse the cucumber, trim, cut in half lengthwise, remove seeds and dice finely. Rinse scallions, clean and cut diagonally into rings. Rinse the tomatoes, cut into quarters, remove the seeds and dice into small cubes. Grate the lime peel and squeeze the juice. Mix zest with the mayonnaise and yogurt until smooth. Season with lime juice, salt and cayenne pepper. Combine dressing with the remaining ingredients, season to taste and serve.

Serve with toast, if desired.
