Salmon Tartare on Bread with Cress

- 2 slices Smoked salmon
- ½ Lime
- 1 pc Horseradish
- ½ Apple
- 4 Radish
- 1 Tbsp Sour cream
- 2 slices Whole Wheat Toast
- ½ bed Cress
Chop salmon coarsely and place in a small bowl.
Rinse the lime in hot water, wipe dry and finely grate the zest. Squeeze lime half and add the juice and zest to the salmon.
Rinse horseradish, peel and grate finely.
Rinse the apple half, cut in half again, core and finely grate. Rinse and dry radish.
Mix horseradish, apple and sour cream with the salmon. Toast the bread, spread with the salmon tartare and top with cress. Garnish with the radishes and serve.

Salmon provides omega-3 fatty acids plus plenty of vitamin D for healthy bones. Horseradish, radish and cress stimulate digestion with their mustard oils and have an anti-inflammatory effect.
