Rice Porridge with Peppers
- Ingredients
- 2 red Bell pepper (about 400 grams)
- 4 ozs par-boiled Brown rice
- 2 Tbsps hulled Sesame seeds (about 20 grams)
- ½ Orange
- 3 Tbsps Canola oil
Halve bell peppers, remove seeds, rinse and cut into small dice.
Boil 200 ml (approximately 3/4 cup) of water in a pot. Add diced peppers, rice and sesame seeds and return to a boil. Cover and cook over low heat until tender, about 20 minutes.
Squeeze out the orange juice. Stir juice and canola oil into the rice mixture.
Puree with an immersion blender. Allow to cool. Feed 1 serving; let the rest cool completely and freeze in single-serve portions.
