Toast sunflower seeds in a nonstick pan and cool on a plate.

Rinse radishes, clean and cut into slices. Rinse scallions, trim and chop finely. Rinse arugula, pat dry and cut into small pieces.

Mix lemon juice with salt, pepper and olive oil. Mix dressing with sunflower seeds and salad ingredients in order.
4.
Before serving, crumble feta cheese over the top and garnish with capers.
