- 1 ½ kilograms small Nectarine
- 250 grams sugar
- 2 scallions (only the whites)
- 150 milliliters Red wine vinegar
- 1 tsp Mustard seed
- 1 tsp salt
- 1 tsp Coriander
- 1 tsp peppercorns
Preparation

Blanch the nectarines, peel, cut in half and remove the pits.

Boil 400 ml (approximately 13 ounces) of water in a saucepan with the sugar. Simmer for a few minutes until the sugar has completely dissolved. Add the nectarines and bring to a boil, then remove them with a slotted spoon, drain and pour into prepared glasses.

Rinse the scallions and cut into thin rings. Mix with the vinegar, mustard, salt, coriander and pepper, stir into the broth and simmer for 5 minutes over low heat. Pour the broth over the nectarines through a sieve and stir gently. Seal the glasses and allow to cool.

Allow to sit for at least 4 days before serving.
