- 18 small, new potatoes
- 3 Tbsps coarse Sea salt
- 1 slice white bread
- 1 garlic clove
- 100 milliliters olive oil
- 2 Tbsps White vinegar
- 1 Tbsp ground paprika
- 1 dried, red chili pepper
- 1 pinch Cumin
- salt (and pepper)
Preparation

Rinse the potatoes and place in a saucepan along with the salt. Cover with water and cook for 30 minutes.
For the mojo sauce, soak the bread in water and peel the garlic. Squeeze out the excess water from the bread and purée together with the dried chile pepper, the garlic and the olive oil in a blender. Transfer to a bowl and mix with the vinegar, 50 ml of water (approximately 1/4 cup) and paprika and season with cumin, salt and pepper.

Drain the potatoes and return to the pot. Cook for another 10 minutes, shaking the pot frequently, until the skins are dry and wrinkled.
Serve the potatoes with the mojo sauce.
