Pancakes Stuffed with Salmon

- 7 ozs Pastry flour
- 10 ozs milk
- 1 pinch salt
- 2 eggs
- 3 Tbsps vegetable oil (for frying)
- 14 ozs cream cheese
- 1 tsp Horseradish (from a jar)
- ½ lemon (zested and juiced)
- 12 slices Smoked salmon
- Dill (for garnish)
For the pancakes, stir the flour with the milk and the salt until smooth. Mix in the eggs and let stand for about 20 minutes.
To cook each pancake, heat some vegetable oil in a hot, slightly smaller pan (about 8" diameter) and cook 12 thin, small pancakes one at a time. Remove the cooked pancakes from the pan and stack on a plate.
Mix the cream cheese with horseradish and lemon zest until creamy. Season with lemon juice and thinly spread over the still slightly warm pancakes. Place one slice of smoked salmon over each pancake and fold twice.
Arrange the stuffed pancakes on plates and serve garnished with dill.
