- 1 ½ cups Basmati rice (cooked and cooled)
- 2 Chicken breasts (skin on)
- 2 Tbsps Nut oil
- 1 tsp Chinese 5 spice powder
- 1 red pepper (seeded and finely diced)
- 1 green pepper (seeded and finely diced)
- 2 Tbsps Rice vinegar
- 1 Tbsp Nut oil
- salt
- peppers
- 1 tsp sugar
- cilantro
Preparation

Preheat the oven to 200°C (180° fan) | 400F | gas 6.

Rub the chicken with oil and 5-spice and roast in the oven for 20 minutes until cooked. Set aside to rest.

Mix the cooled rice with the peppers. Whisk together the rice vinegar, oil, seasoning and a little sugar, taste and correct the seasoning. Toss with the rice.
4.
Slice the chicken into chunks and sit on top of the rice salad. Decorate with sprigs of coriander and serve.
